How to Make this Sticky BBQ Chicken

Steps 1 and 2 for making BBQ chicken.
  • Step 1: In a mixing bowl, combine olive oil and lemon juice with the garlic powder, onion powder, paprika, and salt.
  • Step 2: Arrange the chicken thighs in a 9×13 baking dish and coat them on all sides with the seasoning mixture. Bake at 350 degrees F for 20 minutes.

  • Step 3: While the chicken bakes, in a separate bowl, combine all of the ingredients for the BBQ sauce.
  • Step 4: Spread half the sauce over the chicken thighs and bake an additional 15 minutes. Repeat and cover with sauce and bake a final 15 minutes, then allow the chicken to cool slightly and serve!

Recipe Tips

  • Chicken is safe and fully cooked when the internal temperature of the chicken reaches 165 degrees F. If you aren’t sure whether your chicken is done, use an instant-read thermometer or meat thermometer to check.
  • Spoon some of that leftover BBQ sauce in the baking dish over top of your chicken–it’s so flavorful and shouldn’t go to waste!
  • This dish can also be made with chicken breasts, but they cook a bit faster than chicken thighs so be sure you keep a close eye on them.
  • Another option is to use chicken legs or chicken quarters.
  • If your chicken thighs are boneless, you’ll also have to cut down on cooking times.
  • I like to grate my garlic and onion to prevent large chunks in the sauce, but you could also finely chop or mince them.

Ingredients

  • 3 pounds chicken thighs (about 6) bone in skin on
  • 3 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 3 teaspoons smoked paprika
  • 1 teaspoon salt
  • 3 tablespoon olive oil
  • 1 tablespoon lemon juice

BBQ Sauce

  • 1/3 cup ketchup
  • 1/3 cup soy sauce low sodium
  • 1/3 cup honey
  • 3 garlic cloves grated or finely minced
  • 3 tablespoons red onion grated or finely diced
  • 1/2 teaspoon ginger
  • teaspoon hot sauce

Instructions

  • Preheat the oven to 350 degrees
  • In a small bowl mix together the, garlic powder, onion powder, paprika, salt, olive oil and lemon juice until combined.
  • Place the chicken thighs in a 9×13 baking dish and rub the seasoning mixture on both sides of each thigh.
  • Bake for 20 minutes
  • In a small bowl mix together the ketchup,soy sauce, honey, garlic, onion, ginger, and hot sauce until combined.
  • Remove the chicken from the oven and spread 1/2 of the sauce on top of each chicken thigh. Place back into the oven and bake another 15 minutes.
  • Spread the remaining sauce on top of each chicken thigh and bake for another 15 minutes or until the internal temperature reaches 165 degrees.
  • Remove from the oven and let rest 10 minutes serves with mashed potatoes or rice!

Notes

  • You can also use chicken legs or quarters. Boneless skinless chicken thigh can be used but you’ll have to cut down on the cooking time.
  • I prefer to grate the onion and garlic so there are no chunks but you can finely dice them if you prefer.
